Nema ništa ljepše nego započeti dan s finom kavom i omiljenim pecivom, čiji miris dopire iz vlastite kuhinje! Najljepše pecivo je upravo servirano i pridružite nam se!

Priprema:

U 2,5 dl toplog mlijeka otopiti 1/4 kocke svježeg kvasca i to umiješati s 500 g brašna, 5-6 žlica ulja, 1 žlica soli!
To sve dobro umijesiti, nauljiti i dizati na toplom dok se ne udvostruči količina.
Još treba 200 g maslaca podijeljena na 3 dijela.
Za nadjev:
300 - 400 g svježeg sira i 1 jaje za premazivanje i sezam za posipanje

Oduvijek je moj omiljeni kruh! Privukao me izgledom, okusom i savršeno hrskavom koricom!
I već dugo se želim okušati u izradi, ali me strah od neuspjeha, sve do danas držao daleko od pokušaja!
I ako sam jako zadovoljna, ipak će tu trebati neke stvari malo bolje posložiti! Mora i može još bolje! Pridružite mi se i umijesimo skupa taj savršeni - BAGUETTE!

Sastojci:
1kg brašna, 700 ml vode, stari kvas ( tijesto od prethodnog ) ili 2 -3 g svježeg kvasca, 1 i 1/2 žlice soli.

Prosijati brašno i odvojiti 200 - 300 g. Ostatak umijesiti kako je pokazano u videu!
Ako mijesite sa svježim kvascem treba ga najprije otopiti u vodi i s vodom umiješati u brašno ...
Tijesto umijesiti žlicom takve mekoće da se lako može lupati žlicom, a lupa se najmanje 10 min!
Ostatak brašna umijesiti rukom i pouljiti, pokriti folijom i ostaviti da se diže 5-6 sati najmanje !
Ili preko noći!

Grašak! Biži! I nije neka mudrost spremiti dobar grašak s teletinom... ili ipak jest!?
Oduvijek smo jedva čekali proljeće i prve mahune graška u našem vrtu ... Danas na sreću nije više tako! Ovo je grašak iz moje škrinje i još uvijek imam predivnu boju ... okus i miris! A kako sam ga spremila neka slike pričaju!

Sastojci:
500 - 600 g teletine od vrata ili plećke, 1-2 luka, 2-3 mrkve, 500-600 g graška, 2-3 lista kadulje,
2-3 češnja češnjaka, sol, papar, 2 zrele rajčice (manje) ili 2-3 žlice šalše, ulje i 1 žličica šećera

Jednu stvar uvijek ponavljam - lako je od dobrog komada mesa napraviti dobro jelo !
Juneći vrat s kosti sigurno ne spada u te vrhunske komade i pozicije, ali ovako ispečen i pripremljen, postaje vrhunsko jelo! Probajte!

Priprema započinje u mesnici!
Neka komad vrata bude debljine oko 2- 2,5 cm i težine 500 - 600 g
Poželjno je da bude prošaran i malo masniji... Samo tako će biti sočan i fin!

Omotati ga prozirnom folijom ili spremiti u posudu s poklopcem i ostaviti 2-3 dana u hladnjak ...
Nauljiti i peći na uljem premazanoj tavi i dobro zagrijanoj! Soliti i papriti na kraju !
Premazati senfom ili ne ... stvar je ukusa!
Maslinovo ulje je nama najfinije ... ali i maslac je dobar izbor!

Maškare su preuzele ključeve grada i zavladale njime... To je oduvijek bio poseban dan u našoj obitelji i obilježimo ga uvijek istom slasticom - predivnom, malom fritulicom.
Danas smo ih napravili na jedan starinski način - recept je iz riznice moje nona Milke!
Maškarice ( dječica iz ulice ) će biti oduševljena ... Idemo u kuhinju!


Kuglof od fritula / Cake made of fritters

Za dalmatinske fritule ( vi možete bilo koje) vam treba:
nadošli kvasac - 1/4 kocke kvasca ili 1/2 žličice suhog, 2 žlice šećera, 2 žlice brašna i 1 dl tople vode ...
To izmiješati i dizati 10-ak min.

I treba vam :
700 g brašna, pola žličice soli, kora i sok limuna, 3-4 žlice grožđica, 3-4 žlice sjeckanih oraha,
5-6 žlica rakije i toliko mlake vode da se može lako mijesiti žlicom
Ulje za prženje...
Za preljev:
-7 žlica šećera, 10 -ak žlica vode prokuhati da postane prozirno, dodati sok i kriške limuna
Za umakanje i glazuru fritula:
-300 g čokolade za kuhanje i 150 g maslaca.
Za ukras:
100 g bijele čokolade i šećerni bomboni

Mislim da sam vam već pričala o teta Reziki! Bila je najbolja prijateljica moje nona Milke i kao svaka slavonka, radila je predivne kolače! Ovo je njen recept i kako sam obećala, pridržavala sam se strogo njenih uputa... ali izgledom ni ovaj put nisam zadovoljna!
Njeni su bili otvoreniji, nekako lepazastiji i pufastiji! Probajte, možda vaši budu baš takvi!

Sastojci:
300 g sala, 600 g brašna, 4 žutanjka, 2 jaja, sok i kora limuna, 1-2 vanil šećera, 2 žlice šećera, 1 žličica soli, 1,5 dl bijelog vina, 1 žlica masti i vode koliko treba da se umijesi tijesto.
Džem od šljiva ili naranče, šećer u prahu za posipanje

Salo se očisti od žilica i opnica i samelje na mašini za meso! Ja sam u sjeckalici!
Salo mora biti pjenasto ... podijeliti ga na 3 dijela. Za svako preklapanje rasporediti po jedan dio!

Ingredients:

Jaja kao od mramora dobit ćete vrlo jednostavnim postupkom!
Ako ste do sada bojali jaja u ljusci luka, ovo za vas neće biti nikakav problem!

Potrebno je imati nešto više lupine od ljubičastog i crvenog luka i češnjaka, prehrambene boje, koje inače koristite za bojanje jaja i kolača, prozirne čarape, konac za vezanje, jabučni ocat, sol i naravno, bijela jaja.
Ako ih nemate izbijelite ih po našim uputama...

Lupine staviti u dublju zdjelu i škaricama samo rezati... dok se ne usitni! Jaja namočiti u vodi, uvaljati i uvezati... Kuhati u posoljenoj vodi 5-6 min od kad prokuha!
U posudice staviti boju, 2 žlice octa i vruće vode koliko je potrebno da prekrije jaje.
Kuhana jaja odmah staviti u posudice s bojom ... neka ostanu 10 - ak min najmanje!
