I ako ga zovem maminim ipak je to ajvar na moj način. 
Zašto? Zato što uvjeti u kojima ja radim nisu kao oni u kojima je moja mama to radila...To je bila prava fešta u dvorištu i ljetnoj kuhinji... Ja u 34 kvadrata radim nemoguće, a ajvar se jedva čeka...

Sastojci:
3 kg crvenih roga paprika, 2 kg običnih paprika (žutih),1 kg patlidžana, 2-3 feferona, 1 glavica češnjaka, 500 ml ulja, 2 dl octa, alkoholnog ili vinskog, sol i 1 žlica crvene mljevene paprike (slatke)

Paprike složiti u nauljen lim za pečenje i peći na najjače u dobro zagrijanoj pećnici. Kad dobro zagore izvaditi, pokriti alufolijom dok se ne ohlade. Patlidžane rezati na pola i peći u nauljenom limu rezom prema dolje dok ne omekšaju...
Očistiti kožice i sjemenje od paprika, a patlidžane žlicom odvojiti od kože. Paprike staviti u cijedilo i ostaviti preko noći da se dobro ocijedi tekućina koju ispuštaju...
Sve samljeti na starom stroju za mljevenje mesa, izmiješati ...Češnjak i feferone usitniti ili i njih samljeti skupa s paprikama u stroju...
U dubljoj posudi koja može u pećnicu, ugrijati ulje, dodati mljevenu papriku, paziti da ne zagori ! 
Odmah umiješati mljeveno povrće... Miješati dok se ne upije svo ulje. Ulje ugrijati u posudi sa strane i dodavati po dio tokom pečenja! Ali ja taj dio ubrzam i stavim sve na početku!
Posoliti i dodati češnjak i feferon. Staviti u dobro ugrijanu pećnicu na 200 - 220°C . 
Peći oko pola sata. Umiješati ocat i vratiti u pećnicu... još oko pola sata ili do željene gustoće!
Ugrijati staklenke i u njih rasporediti vreli ajvar.
Staklenke složiti u lim i vratiti u pećnicu na 150°C 15 min, da se površina ajvara lagano zapeče.
U svaku uliti po malo ulja i zatvoriti!
Uživati odmah ili dok traje... Naš ajvar ne dočeka zimu, a nekoliko puta se pravi tokom sezone...

Ingredients :

Ovo je zapravo jedno uobičajeno ljetno jelo koje mi posebno volimo, a koje nas zarazi i ispuni dječijom radošću i veseljem ...

Sastojci: 
2 žute paprike, 2 crvene paprike, 2 tikvice, 1 veći patlidžan ili više, 250 - 300 g mljevenog mesa, 1 crveni luk, 
2 češnja češnjaka, 2-3 žlice parmezana, pola vezice peršina, 2-3 žlice krušnih mrvica, 1 jaje, sol, papar, maslinovo ulje, komadići pancete...ali može i bez
Za preljev ( umak): 
2-3 dl juhe ili vode s kockom, 1 žlica koncentrata rajčice, 1 češanj češnjaka...

Priprema:

Paprike očistiti od sjemenki. Patlidžan rezati na pola, izvaditi sredinu oprezno nožem i žličicom...Tikvice isto tako rezati na komade ako su veće i svaki izdubiti kao lađu...
Ostatke povrća, kao i izvađeni dio sačuvati i usitniti.
Povrće iznutra posoliti i ostaviti ...ocijediti ili papirom pokupiti vodu koja se odvoji...
Na ulju popržiti usitnjeni luk, dodati meso i kratko pržiti. Soliti i papriti. Dodati ostatke povrća i još 3-4 min pržiti...Kad se ohladi umiješati sve navedene sastojke. Smjesu rasporediti po zdjelicama od povrća...
Složiti u nauljen oblik za pečenje. Peći 20 - tak min u dobro zagrijanoj pećnici na 220°C. Izvaditi i preliti umakom... Vratiti u pećnicu još 20 - 25 min...
Izrezati slaninu na manje komade i na svaku staviti po komadić ...peći dok ne zažuti i zahrska...
Pokriti folijom pred kraj pečenja ako je dobilo previše boje...Povremeno preliti umakom od pečenja i doliti po malo juhe ako treba.
Uz pire je savršen ručak!
Nakapati maslinovim uljem ako se ne stavi slanina!

Ingredients :

Kvorum ražnjići / Chicken kabobs - video recept

Zanimljivo, kako se i nakon toliko godina iskustva dogodi da ne znate što biste za ručak. Kupim danas pileća prsa... ali sve nešto odgađam... hoću - neću! Ma šta je loše u pohancima?! Ništa...Narežem filet na odreske...previše tanko, skoro prozirno! Užas...panika... Ali budi se ono nešto što imaš u sebi ili godine iskustva donesu...Ovo su trebali biti pohanci...A sad imam predivno jelo na koje sam ponosna i u kojem smo svi uživali!

Hobotnica nije moje omiljeno jelo, ali je spremam s jednakom strašću kao i svako drugo! Kroz svoj dugi, istraživački rad, pronašla sam i probala razne recepte za hobotnicu s krumpirima, iz pećnice ili peke...
Probala kod susjeda, prijatelja, rodbine ... u restoranima i od svih skupila najbolje i složila svoju priču! 
Dobru ili lošu, prosudite sami, a priča ide ovako....

Sastojci: 
Hobotnica teška oko 2 kg, 2 kg krumpira...ili više, 2-3 češnja češnjaka, listići ružmarina ili grančica, maslinovo ulje, mini rajčice, sol, papar, 2 dl bijelog vina.
Za umak ( preljev ): 
3-4 žlice maslinova ulja, 2-3 žlice soka limuna, 2-3 žlice sjeckanog peršina, 3-4 žlice riblje juhe, sol, papar po ukusu

Priprema:
Postupak pripreme pogledajte u našem video receptu... 

Hobotnicu zalediti nekoliko dana prije, ako kupite živu na ribarnici... Ako je zaleđena onda je odlediti u 
slanoj vodi ...
Ocijediti i staviti u dublju posudu ili lonac, dodati 2-3 žlice vode i poklopiti. Kuhati na srednje jakoj vatri oko 20 min... Pustit će dovoljno vode u kojoj će se kuhati i neće zagoriti. Probati i ako vam se čini još tvrdom nastaviti 
5-6 min...
Izvaditi je, a preostalu tekućinu sačuvati. Nema je baš puno, ali 2-3 žlice su zlata vrijedne.


Hobotnica iz pećnice

Za to vrijeme oguliti i narezati krumpire na kriške 6 - 7 mm debele, posoliti, nauljiti, staviti u posudu za pečenje. Dodati ružmarin, češnjak i staviti peći na 220 - 250°C oko 20 min...
Hobotnicu narezati na krakove, posoliti po ukusu, nauljiti i složiti na zapečeni krumpir... Nastaviti peći još desetak min pa dodati rajčice i zaliti vinom...
Smanjiti temperaturu ako treba, ili malo pokriti folijom, ali ja to izbjegavam! Više volim da zarumeni nego da kuha u pari! 
Zaliti i onu preostalu tekućinu od kuhanja hobotnice i ostaviti u isključenoj pećnici nekoliko min...
Pripremiti umak od češnjaka, peršina, soka limuna, maslinova ulja, juhe, soli i papara po ukusu, samo izmješati i preliti prije serviranja ...
U slast vam bila moja hoba! I stavite više krumpira !

Ingredients :

Bogat prilog ili lagan ljetni ručak! U svakom slučaju ukusno i zdravo jelo, a ostatak će dobro doći kao hladna 
večera ... Uživajte s nama u obilju i darežljivosti ljeta!

Sastojci:

5- 6 većih paprika, 5-6 zrelih rajčica, 2-3 crvena luka, 1-2 tikvice, 2-3 šake riže, 3-4 češnja češnjaka, 2-3 mrkve, grančica celera, sol, papar, maslinovo ulje i chili papričica ili samo komadić po ukusu!

Priprema:

Narezati luk na veće polukružne komade... Kratko ga zažutiti na ulju i maknuti sa strane.
U istu tavu dodati još malo ulja i pržiti kratko mrkvu, dodati celer ... Pržiti... Dodati paprike, pa tikvice... Posoliti i popapriti... Ako je količina veća pržiti u dva puta, da se ne skaši povrće!
Na kraju kratko popržiti rajčice očišćene od kožice i sjemenki, ali i ne mora... 
Slagati po redu....

Na kraju dodati nekoliko režnjeva češnjaka i ljubičastog luka. Nakapati maslinovim uljem i staviti u dobro zagrijanu pećnicu. Peći oko 20 min na 250°C... Ne dodavati nikakvu tekućinu jer ga ima dovoljno u povrću i riža se napije taman koliko treba.
Mi smo danas uživali i ostatak je uvijek najslađi za večeru! Veselim se još jednoj kasnoj porciji! Možda će te i vi!

Ne volite jetra! Ništa čudno ... većina ih ne voli! Toj većini nikad nisam pripadala i sretna sam zbog tog.
Želite li preći na moju stranu? Ni nakon što ste vidjeli ove lijepe slike...? Vjerujem ipak da će te bar jednom probati! Ove polpete to zaslužuju!

Sastojci:
250 - 300 g pilećih jetrica, 1-2 glavice crvenog luka, 2-3 velike žlice ribanog parmezana, 2-3 kriške namočena kruha ( samo pupa), sol, papar, 2 -3 žlice krušnih mrvica.
Jaje i brašno za pohanje i ulje za prženje.
Za prilog skuhana cikla, mini rajčice, maslinovo ulje, aceto balsamico, listići bosiljka, sol

Priprema:

Jetra očistiti od žilica i opne. Raditi to nožem na dasci - strugati dok se sve žilice ne oslobode. Jetra će postati prilično kašasta ali će na kraju biti fine polpete.
Jetra još dobro usitniti nožem ...skoro kao paštetu!
Namočiti kruh, dobro ocijediti od vode ili mlijeka i dodati jetricama.
Usitniti jedan veći luk ili dva manja, popržiti na ulju do zlatnožuto, malo ohladiti pa i njega dodati...
Posoliti, popapriti, umiješati parmezan i sve izmiješati. Ako je smjesa još rijetka dodati krušne mrvice, ali oprezno da ne postane pretvrda.
Mokrim rukama oblikovati kuglice, ne prevelike i uvaljati svaku u brašno. Dlanom pritisnuti i formirati polpete...
Nakon brašna polpete namočiti u razmućeno jaje i vilicom ili špatulicom premjestiti u tavu s uljem.
Pržiti u dobro zagrijanom ulju na srednjoj temperaturi, kako bi ostale zlatnosmeđe.
Pržiti po 4-5 min s jedne i toliko s druge strane ... ovisno koliko su debele. Pažljivo ih okrenuti jer su još mekane...
Pržene vaditi na upijajući papir i servirati uz salatu od cikle... Skuhati ciklu, oguliti, narezati na sitne kockice, posoliti, nauljiti i nakapati aceto balsamico... Dodati kolutiće ljubičastog luka, mini rajčice i listiće svježeg bosiljka!
Nikad ne biste rekli da su ovo polpete od jetrica! Nisam znala ni ja dok mi nisu rekli...!

Ingredients :

Liver cleanse of vessels and membranes . Do that  with a knife on a board - scraping until all the blood vessels are released . The liver will become quite mushy but will eventually be fine burgers . The liver still good chop with a knife ... almost like pate! Soak bread , well drained of water or milk and add it to the liver.
Chop up a bigger onion or two small , fry in oil until golden , a little cool and also add to the liver ... Add salt , pepper , parmesan cheese and mix all . If the mixture is still rare  add bread crumbs, but careful not to become too hard .
With wet hands form balls , not too big and roll each in flour . Press them by hand and forme burgers ... After the flour burgers dip in beaten egg, with a fork  move them into a pan with oil . Fry them in hot oil well at medium temperature , so that other golden brown . Fry 4-5 minutes on one side and as many on the other... depending how thick they are . Fried place on absorbent paper and serve with a salad of beetroot ... Cook beets , peel , cut into small cubes , salted , oiled and poured balsamic vinegar ... Add slices of purple onion, cherry tomatoes and fresh basil ! 
Never would you say that these fritters are made from liver ! I did not know it either until I was told ... !

Gledajući slike s rođendanskih proslava jedne mostarske obitelji, u oko mi je upala jedna nježna i pahuljasta 
torta ... Lagana kao lahor... ili ljetni povjetarac s Neretve! Dugo sam čekala recept i napokon dočekala, tamo negdje 86.-e, 87. - me! Znam samo da je bilo ljeto i da nismo mogli prestati jesti.. . sve dok na ovalu nije ostao samo trag! A recept ide ovako...

Sastojci: 
8 bjelanjaka, 300 g šećera, 1 žlica soka limuna.
Za kremu: 
8 žutanjaka, 160 g prah šećera, 3 žlice gustina, 250 ml mlijeka, 250 g masla ili margarina ( obavezno zvijezdin ), 3 vrećice šlag pjene i mlijeka koliko treba za umutiti ga, 250 g krupno mljevenih oraha

Priprema:

Bjelanjke tući u čvrst snijeg. Tek kad je jako čvrsto početi dodavati po malo šećer. Svaki put tući po 3-4 min i dodati slijedeći dio. Neka dodavanje bude najmanje 5 puta! Važno je da se šećer sasvim otopi ... Nakon zadnjeg dodavanja miksati duplo duže. Probati smjesu i ako osjećate da još hrska nastaviti miksati... Smjesa mora biti jako, jako čvrsta da mikser teško prolazi kroz nju i uz to mora biti satenski sjajna!
Pripremiti lim 35 x 25 cm otprilike, obložiti ga pek papirom i nauljiti ... Izliti smjesu, poravnati i peći - sušiti na 110 - 120°C oko 2 sata - ovisno o pećnici i niže! Rešetku spustiti na najnižu razinu... 
Nakon pola pečenja pokriti alufolijom da ne potamni odozgo. Izvaditi, okrenuti, skinuti papir... Kora je svijetla i hrskava izvana! Ako šećer nije bio dovoljno dobro umućen pojavit će se kapljice i sve će se pretvoriti u sluzavu i ružnu smjesu. Najvažnije je - dobro umutiti!
Za kremu prokuhati mlijeko! Izmješati mikserom žutanjke i šećer, dodati škrobno brašno i sve dobro izmješati mikserom... Uliti dio vrućeg mlijeka, promiksati i sve sada uliti u mlijeko koje nastaviti kuhati na laganoj vatri i miješajući pjenjačom... Kuhati kao puding.... Pokriti prozirnom folijom i ohladiti.
Pjenasto miksati maslac sobne temperature ( mora biti nekoliko sati izvan hladnjaka prije miksanja) i umiješati žlicu po žlicu hladnu kremu.
Izmiksati šlag kako piše na pakiranju. Malo manje od pola količine dodat u kremu s maslacem, a preostalim dijelom premazati tortu izvana.
I kremu s maslacem podijeliti na 2 dijela, jednaka! U jedan dodati krupno mljevene orahe.
Staviti koru na podložak. Premazati kremu s orasima. Preko rasporediti kremu s maslacem. Na kraju tortu premazati i ukrasiti šlagom!

Ingredients : 
8 egg whites , 300 g sugar , 1 tablespoon lemon juice .

Ovo je omiljeni kolač moje kćeri i uvijek je čeka kad dolazi na mali godišnji odmor za vrijeme ljeta. Kremast je i lagan pa dobro ohlađen zaista prija za vrijeme ljetnih vrućina.

Sastojci: 
8 bjelanjaka, 8 žlica šećera, 8 žlica brašna, 2 dl hladnog mlijeka, 1 prašak za pecivo.
Za kremu: 
8 žutanjaka, 6 žlica šećera, 8 dl mlijeka, 10 žlica brašna, 1 mahuna vanilije ili 2 vrećice burbon vanilije...može i obična, 200 g maslaca, 250 - 300 ml vrhnja za šlag i 200 - 300 g malina.

Odvojiti bjelanjke od žutanjaka. Bjelanjke miksati u čvrst snijeg i postupno dodati šećer...miksati toliko dugo dok ne postane sjajno i jako čvrsto. Umiješati brašno prosijano s praškom za pecivo, pazeći da se što manje zraka izgubi iz bjelanjaka... Smjesu rasporediti na pripremljen, maslom premazan i pobrašnjen lim za pečenje oko 
35 x 25 cm veličine.
Peći 12 - 15 min na 160 - 170°C ... Pečeno odmah preliti hladnim mlijekom ... Biskvit će brzo popiti svo mlijeko, pa ako želite više sočnosti dodajte još malo mlijeka...ali ne pretjerano da ne bude barica ispod...
Za kremu prokuhati mlijeko i vaniliju, procijediti. Posebno izmiješati žutanjke, šećer i brašno. Uliti dio vrućeg mlijeka. Promiješati i sad to uliti u preostalo mlijeko... Izmiješati još sad sve skupa i vratiti na laganu vatru. Kuhati miješajući dok se ne zgusne... Pokriti prozirnom folijom i ohladiti.
Pjenasto izraditi maslac i umiksati dio po dio hladne kreme... Kremu rasporediti preko biskvita, poravnati i premazati čvrsto umućenim vrhnjem za šlag. Dobro ohladiti u hladnjaku i rezati sutra na veće kocke ... ili po ukusu! Dio voća samljeti s nekoliko žlica šećera, a dio malina servirati u bobicama...

Sastojci: 
Paprike u bojama, patlidžan, ljutika (šarlota), češnjak, celer granaš( onaj veliki i slatki), mini rajčice, listići bosiljka, sol, maslinovo ulje, prethodno skuhana šalša ( umak od rajčica)...

Priprema:
Postupak pripreme  pogledajte u našem video receptu...

Nauljiti posudu za pečenje. Dodavati pripremljeno i narezano povrće na otprilike iste komade... Celer prethodno očistiti od vanjskih vlaknastih dijelova...
Posoliti, nauljiti i peći na 250°C u zagrijanoj pećnici... dok ne dobije finu boju - 15 - 20 min. Promiješati pazeći da se ne skaši... Dodati listiće bosiljka i vratiti 5 - 8 min... ili po želji malo duže, do željene boje!
Što se tiče kobasica... Ja uzmem najradije kranjske i kuham ih 15 -ak min u vodi... Prethodno malo narežem. Ocijedim i prepečem na dobro zagrijanoj roštilj tavi ili običnoj s malo ulja...
Skuhati špagete, dodati šalšu... i ovo predivno povrće nabacati u što je moguće većoj količini!
Kobasice narezati i gozba neka počne!
