kosti i glave, 2-3 fileta, 100 g crvenog luka, 5-6 režnjeva češnjaka, 1 dl bijelog vina, 50 ml maslinovog ulja, 1 mrkva, kriška celera, pola vezice peršina, 1 l vode, sol, papar u zrnu ... riža
