Kako napraviti rižot od kozica bez vrhnja? 
Rižot kakav niste probali ili mislite da je previše zahtjevno... Možda, ali je stostruko bolji od onog s okusom vrhnja ...ovo je okus kozica...okus mora i čiste ljepote!


Rižot od kozica

Sastojci: 
300 g očišćenih kozica, 1,5 dl maslinova ulja, 1 crveni luk, 1 rajčica ( samo za boju ), 1,5 dl bijelog vina, 
500 - 600 ml temeljca od glava kozica ili ribljeg, 300 - 400 g riže, sol, papar, peršin...

Priprema:

Na 3 - 4 žlice maslinova ulja popržiti kratko usitnjeni luk ... Kad povene dodati rižu i pržiti da zastakli...
Uliti vino i kuhati dok potpuno ne ispari. Početi dodavati po malo temeljac... miješati...

Kad riža sve popije dodati još malo temeljca. Soliti i papriti... Ponavljati dodavanje sve dok riža nije skoro kuhana. 


Rižot od kozica

Najbolje ju je ostaviti na 80 - 85% kuhanu i maknuti s vatre.
U tom trenutku mora imati dovoljno ljepljivog umaka ... da se poput lave miče u posudi... 
Posebno popržiti kozice na jako ugrijanoj tavi i 1-2 žlice maslinova ulja. Pržiti 1-2 min i dodati kockice rajčice, bez sjemenki... Promiješati i dodati riži...
