Janjeća jetra na kiselo / Sweet and sour lamb liver



Ako vam jetrice same po sebi nisu privlačne neka vas zainteresira makar način na koji se spremaju ...ovo je jedan stari, težački recept u kojem ja i veći dio moje obitelji uživamo još i danas...

POTREBNO:
janjeća jetra, pluća i srce, 2-3 luka, 3 češnja češnjaka, pola vezice peršina, sol, papar, ulje, 5-6 žlica octa, 2 lista kadulje, 1 žlica šećera

PRIPREMA:

->Jetru oprati, narezati na duguljaste komade i pržiti na vrućem ulju dok se dobro karamelizira
->Dodati posebno poprženi luk narezan na režnjeve i nastaviti zajedno pirjati uz dodavanje vode u malim količinama
->Dodati i preostale sastojke, posoliti i popapriti
->Pred kraj dodati ocat i samo kratko prokuhati
Za prilog skuhati rijetku puru, razliti je na foliju ili peka papir tanko oko 1 cm i ostaviti da se malo ohladi ali ne sasvim...
Posebno u tavi na malo ulja popržiti sitno narezanu slaninu i nekoliko stručaka mladog luka pa rasporediti preko pure i zamotati u rolat...

NEEDED:
lamb liver, lungs and heart , 2-3 onions, 3 cloves of garlic , half a bunch of parsley , salt , pepper , oil , 5-6 tbsp vinegar , 2 leaves of sage , 1 tablespoon sugar , 

PREPARATION:

- > The liver washed , cut into oblong pieces and fry in hot oil until well caramelized
- > Add special fried onions cut into slices and continue to simmer along with the addition of water in small amounts 
- > Add the remaining ingredients and salt and pepper 
- > At the end add the vinegar and just a short boil 
As a side dish cook rare corn grits , spilled it on the foil or baking paper thin about 1 cm and leave to cool a little but not quite ... Especially in a pan with a little oil fry the finely chopped bacon and several strand spring onions but spread over corn grits and wrap in a roll ...
