Ako ga kuhate u juhi, bit će suh i vlaknast ! Ako ga izdvojite i pripremite na ovaj način, uživat će te u njemu kao da je biftek i nećete vjerovati da to doista nije!
Goveđi flam je bilo otkriće ...ali već neko vrijeme mi zaista uživamo!
Sastojci:
Komad goveđe ili juneće potrbušine, sol, ulje, papar, 2-3 žlice konjaka
Za tamni umak:
1 crveni luk, komadić pancete, mediteransko bilje ( lovor, ružmarin, kadulja ), 3-4 žlice sušenih gljiva,
2 dl crvenog vina, 2 dl juhe, 1 žlica maslaca, 2 žlice brašna, svježi timjan

Beef belly with dark sauce

Ingredients:
A piece of beef belly, salt, oil, pepper, 2-3 tablespoons of cognac
For dark sauce:
1 onion, a piece of bacon, Mediterranean herbs (laurel, rosemary, sage), 3-4 spoons of dried mushrooms, 2 dl red wine, 2 dl soup, 1 tablespoon butter, 2 tablespoons flour, fresh thyme
