Pileći burrito / Chicken burrito


Za dobar burito trebam prave, domaće tortilje. Ne kažem da ove kupljene nisu dobre, ali nikad kao kad ih sama pripremim od početka do kraja... to je prava čarolija i užitak!

Otkrijte leću! Ovo je najbolji način da je zavolite! Danas sam uspjela iznenaditi obitelj, a leća se izborila za svoje mjesto na jelovniku Omelićevih... Uskoro ponavljamo!

Sastojci: 
200 - 250 g zelene leće, 1 crveni luk, 1 korijen peršina, 1 mrkva, 1 zrela rajčica, komadić dimljene slanine, 
1 list lovora, grančica ružmarina, 1 - 2 režnja češnjaka, sol i papar.

Leću isprati hladnom vodom i namakati preko noći. Ocijediti.
U lonac uliti vodu, dodati list lovora, ružmarin, sol i dodati leću. Kuhati 10 - tak min. Izvaditi bilje, ocijediti !
Krupno narezati luk i češnjak. Pržiti slaninu na vrlo malo ulja i dodati luk i češnjak... Kad povene i narezanu mrkvu s peršinom... Pirjati i dodati rajčice, bez sjemenki i kožice. Kuhati uz dodavanje po malo vode...soliti i papriti! Kad omekša samljeti štapnim mikserom. Umaku dodati leću i kuhati još 20 - ak min uz povremeno dodavanje vode... nikad previše da je jušno... Neka bude gusto i vatra srednja do lagana kako bi leća ostala u komadu! U suprotnom se odvoji ljuska! To mi se zna dogoditi bez obzira što je namakana preko noći!

Za pljeskavice: 
300 - 400 g mesa, 1 usitnjeni luk, žličica soli, žličica sode bikarbone, papar ...

Sve sastojke dobro izmiješati, ostaviti pola sata u hladnjak...Nauljiti s malo ulja papir za pečenje i razvući meso 
1 cm debljine...ili po volji! Okruglim oblikom vaditi pljeskavice ... Pržiti u teflon tavi samo nauljenoj... zapravo peći!
Ako želite dopecite ih u pećnici s malo štapićasto narezanih paprika i luka, prethodno kratko poprženih. 
Posoliti i nakapati maslinovim uljem...Uslast!

Sama pomisao da nam dolaze dragi ljudi u meni izaziva one najdivnije osjećaje, ali i nemir koji se iz dana u dan samo pojačava i raste kao vulkan prije erupcije. Slatke su to muke u želji da pokažem kako mi je stalo ...
Naravno na moj način i u mojim mogućnostima! Ovo je torta, zapravo čokoladna erupcija ispod kore najsočnijeg biskvita! Razoran čokoladni okus ublažit će ledeno-svježe kapljice sirupa od mente...Uživajte kao moja gošća!

Sastojci:

Za biskvit: 
140 g maslaca,200 g brašna, 40 g kakaa, 30 g čokolade u prahu, 180 ml mlijeka,150 ml vrele vode, 1 i 1/2 žličice sode bikarbone, 1 žličica praška za pecivo, malo soli, 300 g šećera, 3 jaja, vanilija aroma...
Za kremu: 
300 g čokolade za kuhanje, 120 ml mlijeka, 500 ml slatkog vrhnja, 2 žličice želatine mljevene, 1-2 žlice sirupa od mente... http://zlicomivilicom.blogspot.ba/2016/06/sirup-od-mente-mint-syrup.html (može aroma) ili neki drugi...
Za glazuru: 
80 g maslaca, čokolada za kuhanje ( 100 g )

Priprema:
Postupak pripreme  pogledajte u našem video receptu...

Kalup promjera 24 - 26 cm premazati maslacem i naprašiti kakaom. Za sigurnost je dobro staviti i pek papir na dno...
Prokuhati vodu. Umiješati kakao prah da nema grudvica i dodati hladno mlijeko.
Posebno izmješati jaja, šećer, vaniliju za aromu. Dodati komadiće maslaca i na kraju brašno s praškom i sodom bikarbonom. Pomiješati obe smjese i uliti u kalup.
Peći 35 - 40 min na 170°C ili koliko traži pećnica. Provjeriti čačkalicom, pa ako na njoj ostaje tijesta nastaviti peći ... sve dok ne bude potpuno čista! Hladan biskvit rezati na pola.
Za kremu namočiti želatinu u 4 žlice hladne vode. Staviti mlijeko da prokuha. Maknuti ga s vatre i umiješati nabubrenu želatinu...Miješati dok se sasvim ne otopi.
Na pari otopiti čokoladu i u vruću umiješati mlijeko sa želatinom... Istući vrhnje ali da ostane prilično mekano ... nikako da je čvrsto!
Pomiješati čokoladu s vrhnjem i dodati sirup od mente...
Biskvit staviti na podložak, oval i oko njega obruč. Uliti kremu... Preko staviti drugi biskvit i ohladiti nekoliko sati u hladnjaku.
Maknuti obruč i preliti pripremljenom glazurom.
Otopiti...prokuhati 80 g maslaca, maknuti s vatre i umiješati izlomljenu čokoladu za kuhanje( 100 g ).

Ovako dobru ciklu sam samo zamišljala ... Ali prije nekoliko dana sam naišla na ovaj recept i ne znam šta je to u njemu posebno i drugačije! Znam samo da je cikla savršena okusa i da sam već prvi dan sama pojela više od pola staklenke... Otkrijte zašto! Katarina Raić to odavno zna... hvala Katarina!

Sastojci:
3 kg cikle, 1/2 l alkoholnog octa, 1,5 l vode, 3 žlice šećera, 2,5 žlica soli

Priprema:

Odabrati lijepu i zdravu ciklu ...eko uzgoj je obavezan!
Dobro je isprati od zemlje. U veći lonac staviti ciklu, uliti vode toliko da pokrije ciklu i malo preko... Posoliti, samo malo... Poklopiti i kuhati oko 40 min. Ako je cikla prevelika kuhati još 10-15 min. Kuhanu ciklu malo ohladiti, oguliti i narezati na kriške 2-3 mm debele.
U veći lonac uliti vodu, alkoholni ocat, dodati sol i šećer pa prokuhati. Dodati kriške cikle, promiješati i čim prokuha maknuti s vatre.
Čiste i suhe staklenke grijati 15 min u pećnici na 120 - 130°C... Ciklu složiti u vruće staklenke Ne zbijati previše. 
Zaliti vrelom tekućinom od kuhanja ... U staklenkama mogu ostati mjehurići zraka. Drškom žlice se pomoći i istisnuti ih... Samo uroniti dršku do mjehurića... Odmah zatvoriti poklopcima koje isprati u alkoholnom octu...
Čuvati na hladnom i tamnom mjestu i nekoliko mjeseci... ako nešto ostane do tada!

Umak koji će biti vaš as iz rukava u dane kad vam se baš ne da provesti sate u kuhinji. Vrlo je ukusan i jednostavan... Ja sam ga radila od samo jedne vrste sira, ali je još bolji od nekoliko različitih, pogotovo ako imate ostatke i krajeve u hladnjaku, ovo je način kako ih iskoristiti!

Sastojci:
150-200 g sira, 150 - 200 ml vrhnja, 150 ml mlijeka, 2-3 lista kadulje, po mogućnosti svježe, žličica soli, 1 žličica meda, 1 žličica maslaca

Priprema: 
Postupak pripreme  pogledajte u našem video receptu...

Mlijeko, vrhnje, maslac, kadulju i papar prokuhati. Sir izribati na krupnijoj strani ribeža. Prokuhalo mlijeko maknuti s vatre i procijediti. Dodati ribani sir i miješati ... Polako običnom žlicom... Miješati dok se potpuno ne otopi. Mora biti prilično gusto, ali ne previše gusto... Ako treba, dodati još malo vrelog mlijeka, umiješati med i sol...
Ako je bilo pretvrdih dijelova sira procijedite da se ne vide nikakve mrvice.
Umak uliti u staklenku i čuvati u hladnjaku... Može trajati i više dana... 7-10!

Kako spremiti pileća prsa da budu toliko sočna da ni sami ne povjerujete... 
Upravo sam to danas doživjela - najsočnija pileća prsa ikad!

Sastojci:
pileća prsa, 2 jaja, 2-3 žlice ribanog sira ( parmezan ili neki polutvrdi ), 2 žlice maslaca, 2 - 3 žlice umaka od sira ( ja napravim sama od ostataka polutvrdih sireva, mlijeka i vrhnja i imam stalno u staklenci u hladnjaku). 
Sok pola limuna, 2 dl bijelog vina, sol, papar po ukusu, i 1-2 režnja češnjaka

Pileća prsa narezati po užem dijelu na kriške oko 1 cm. Natući tučkom preko folije da se ne oštete vlakna, ne tući previše! Posoliti, ali oprezno jer je sir slan.
Povaljati odreske u brašno, zatim u prethodno izmješana jaja s naribanim sirom na najsitnijem dijelu ribeža.
U tavi zagrijati ulje i dodati pola žlice maslaca ... Pržiti odreske na srednje jakoj vatri do željene boje.
Vaditi ih i držati sa strane. U tavu dodati žlicu svježeg maslaca, žlicu brašna i usitnjeni češnjak. 
Kad zamiriše zaliti vinom, kuhati dok vino ispari i dodati umak od sira...Kuhati dok se ujednači i otopi ...
Vratiti odreske i samo kratko prokuhati...Odresci se ne okreću...
Dodati preostali maslac, papar i ako treba soli. Ucijediti sok pola limuna...

Prije nekoliko tjedana sam dobila nekoliko grančica mente. Zasadila sam je u pitar i ostavila na prozor...
Danas sam sve te mirisne i zelene listove pretočila u ovaj prekrasan sirup. Samo nekoliko žličica učinit će moje torte i kolače od sira još ukusnijim !

Oplemenit će i svaku drugu ljetnu slasticu, a nekoliko kapi na vašem sladoledu ili voćnoj salati bit će istinsko osvježenje i neopisiv doživljaj! Priuštite ga!

Sastojci: 
3-4 šake svježe ubranih listova mente, 10 žlica vode, 10-12 žlica šećera, malo punijih...

Listove mente staviti u prokuhalu vodu i kuhati oko 1 min. Ocijediti i odmah staviti u ledenu vodu, kako bi se naglo ohladila i zadržala lijepu boju.
U dubljoj i užoj posudi kuhati vodu i šećer sve dok ne postane gust i proziran sirup. Ja kuham sve dok mi sa žlice ne pada u niti... Znači dok kapa nije dobro ... mora se slijevati u niti...
Tada maknuti i ostaviti da se neko vrijeme hladi... U toplo dodati listove mente i samljeti mikserom! 
Što je jači sirup će biti bolji i zeleniji.
Procijediti kroz gusto cijedilo ili gazicu. Spremiti u malu staklenku i čuvati u hladnjaku...

5-6 jaja, 150 g gouda sira, 2 tikvice, 2 crvene paprike, maslac, sol, umak po ukusu...

Mislim da će ih ovako nešto oboriti s nogu...

Sastojci:
Pakiranje pancete u kriškama ili najtanje narezana panceta, zelene mahune, 10- ak listića svježeg bosiljka, 
2-3 lista mente, 1-2 češnja češnjaka, 1-2 žličice soka limuna, maslinovo ulje, sol i papar po ukusu

Priprema:
Mahune kuhati 5-6 min u posoljenoj vodi. Ne smiju omekšati... Izvaditi ih i odmah staviti u posudu s hladnom vodom. Tako će zadržati lijepu boju!
Usitniti bosiljak, mentu i češnjak ... Izmiješati s malo maslinova ulja, soka limuna i papra po ukusu...
U toj mješavini marinirati dobro ocijeđene i posušene mahune ...15-ak min najmanje!
Omotati svaku mahunu u krišku slanine, kako se vidi na slici...

Uzmite 2-3 tikvice, 2 jaja, brašno, krušne mrvice, sol i ulje za prženje.
Za nadjev: 
100 g šunke, 200 g sira, 2-3 žlice kiselog vrhnja ( ili za kuhanje), 1 manja rajčica bez sjemenki i kožice, 1 žlica parmezana, 5-6 listića svježeg bosiljka, 2-3 žlice ostataka tikvice, sol po potrebi...

Tikvice narezati na što je moguće tanje kriške, složiti ih, posoliti...

Sitno narezati šunku , sir, rajčicu, ostatke tikvice i listiće bosiljka, pa sve izmiješati i povezati vrhnjem. Mora ostati dosta gusto ... upakirati u paketiće...
