Ne želim i ne mogu ulaziti u detaljan opis, porijeklo i pravi naziv ovog jela. Dovoljno je da ga volim i želim vas navesti da ga probate, ako još niste. Ovaj današnji je malo drugačiji od svih, ali raštika je opet nezamjenjiva i najljepša na svijetu - hercegovačka !

Sastojci: 
600 - 700 g miješanog mljevenog mesa - junetina, janjetina, 30 - ak listova mlade raštike, ne da su preveliki, 
1 crveni luk, 2 češnja češnjaka, 1 žličica crvene paprike, 3 - 4 žlice riže, 100 grama pancete, komadić pancete, 
1 žlica brašna, 500 - 600 ml juhe ili goveđa kocka s vodom, sol, papar, ulje

Na 2 žlice ulja popržiti sitno narezanu slaninu i crveni luk. Kad zazlati dodati crvenu papriku, promiješati i maknuti s vatre.
Sve navedene sastojke izmiješati s 2 dl mlake vode ... Dodati poprženi luk s pancetom i paprikom...
Listove raštike prokuhati 1 min u posoljenoj vodi. Odmah isprati u hladnoj, kako bi zadržali boju.
Odvojiti korjenasti dio iz sredine lista i ne bacati ga.
Na svaki list staviti po žlicu nadjeva i umotati japrak... Složiti u dublju posudu, između staviti komadić suhog, pancete ili ostatke kožica...uliti juhu. Poklopiti poklopcem koji je manjeg promjera i da uđe u posudu. 
Listovi se tako neće odmotavati...
Sad ono što je drugačije ...Korijenje ne bacam ! 
Narezati ga na sitne komadiće. U posudi na žlici ulja popržiti 2 kriške bijele slanine, dodati korijenje. 
1-2 min pržiti, dodati 1 češanj češnjaka, žlicu brašna. Kad zažuti uliti dec - dva juhe ili vode...
Kuhati - pirjati dok omekša i samljeti štapnim mikserom. Za ljepši izgled procijediti ga, ali i vlaknastog dijela korjena ako ga ne podnosite dobro! Kašicu dodati japraku i kuhati još 15 - ak min ... ili do željene gustoće! 
Uz ovako lijepo jelo prilog mi je pire krumpir !

Kupus na najjednostavniji i najomiljeniji način! Mladi, bijeli s preostalim komadima dimljene svinjetine, koji su se u mojoj obitelji čuvali za ovu deliciju! Dobar vam tek! Mama hvala ti što si me natjerala da ga zavolim!

Sastojci:

Dimljeno svinjsko meso s kostima ili slanina od glave, 2 glavice mladog, bijelog kupusa, 1 glavica crvenog luka, 
2-3 češnja češnjaka, 1-2 zrele rajčice, 2-3 mrkve, 1 žlica svinjske masti ( može i ulje ),1 žlica crvene paprike, sol, 
svježe mljeveni papar i pola vezice peršina...

Na masnoći popržiti sitno narezani luk. Kad povene i zazlati dodati mrkvu i češnjak... Pirjati, dodajući po malo juhe od kuhanja mesa. 
Narezati kupus. Odvojiti korjenaste dijelove. Oprati u cjedilu ... Dodati povrću... Posoliti, popapriti i dodati papriku.
Zaliti s većom količinom juhe od mesa...
Oguliti kožicu s rajčice, odstraniti sjemenke i narezati. Dodati kupusu... dodati i peršin u grančicama, kojeg na kraju izvaditi. Kuhati poklopljeno oko pola sata...
Odvojiti meso od kostiju, pancetu narezati i pomiješati s kupusom...

Kilimanjaro je samo izgledom ili bolje reći da sam mascarpone, jagode i anđeoski biskvit složila u formu ove neobične torte...


Kilimanjaro

Sastojci za biskvit: 
5 bjelanjaka, malo soli, 140 g šećera, 80 g brašna, 4 g sode bikarbone, 2 vanilin šećera
Ispeći takva 2 biskvita !

Žumanjke sutra koristim za tjesteninu jer se ništa ne baca!
Nadjev: 
250 g svježeg sira, 250 g mascarpone sira, 1 i 1/2 vrećice mljevene želatine, 120 g šećera u prahu, korica limuna, 300 ml vrhnja za šlag, 300 g jagoda
Žele od jagoda: 
300 ml pirea jagoda ( samljeti štapnim mikserom), 1 i 1/2 vrećice mljevene želatine, 4 žlice šećera u prahu
I još:
200 ml vrhnja za izvana premazati tortu, jagode ili borovnice....voće po ukusu!

Priprema:

Bjelanjke istući u čvrst snijeg s malo soli i postupno dodati šećer i vanil šećer i miksati dok ne postane sjajno i čvrsto. Umiješati brašno sa sodom špatulom u što je moguće manje miješanja... Obložiti je prozirnom folijom i nadjev izliti u nju... Poravnati, pokriti folijom i staviti u ledenicu pola sata najmanje.
Za žele preljev, samljeti jagoda da se dobije 300 ml pirea - soka. Dodati šećer i želatinu nabubrenu i otopljenu u nekoliko žlica soka... Kad je staklasta samo je umiješati u preostali sok... Staviti u hladnjak ... Kad se skoro počne stezati izvaditi i preliti kupolu od sira.

Sastojci: 
Biskvit: 
10 bjelanjaka, 300 g šećera, 100 g mljevenog kikirikija ( kupiti u ljusci ), 100 g prepečenih lješnjaka, 
50 g brašna, 2 žlice kakaa, 1 prašak za pecivo, 1 dl ulja
Za kremu:
10 žutanjaka, 100 g čokolade s većim udjelom kakaa, 10 žlica šećera u prahu, 200 g maslaca, 200 g krupnije sjeckanog kikirikija, 50 g preprženih i samljevenih lješnjaka.
Karamel preljev:

Glazura:

Po uputi i mjeri, Špiček Tomislava... 
S lepinjom čevapi, da zaboli te glava!

Sastojci za čevape:
500 g mljevenog junećeg mesa, 5 češnjeva češnjaka, 1 žličica krupne soli, 2 žličice sode bikarbone, 
1 dl mineralne vode, puno svježe mljevenog papra, soli...


Čevapi  u lepinji

Priprema:

Postupak pripreme čevapa pogledajte u našem video receptu...



Češnjak i krupnu sol staviti u mužar i smrviti u kašu. Protisnuti kroz gusto sito i dodati mesu. 
Isprati sito s mineralnom vodom ( mineralnu vodu dodati u meso ).... dodati papar, soli ako treba...i sodu bikarbonu. 
Sve dobro izmiješati i ostaviti u hladnjak, pokriveno nekoliko sati.
Smjesu staviti u vrećicu s 1,5 - 2 cm velikim otvorom. Na nauljenu podlogu ( pek papir) istiskivati kobasice.,
Narezati na željene komade - čevape. Urediti krajeve...
Peći na dobro zagrijanoj tavi s 2-3 žlice ulja...

Sastojci za lepinju:
500 g brašna, 2 žličice šećera, 2 žličice soli, 1 dl ulja, 2,5 dl tople vode, 1/3 kocke kvasca

Dizati kvasac s malo tople vode, šećerom i žlicom brašna. Miješati mikserom s pola brašna i uljem. Dodavati preostalo brašno i sol ...mijesiti rukom do kraja.
Pokriti folijom i dizati na posudi s toplom vodom ( staviti na posudu s toplom vodom da se ubrzano diže ).
Podijeliti na 4 dijela. Na pobrašnjenom pek papiru razvući pogačice 1 cm debele. Zarezati rombove...pobrašniti i pokriti krpom. Dizati 15 min... Ja sam uspjela 10 min... još je trebalo samo malo...
Zagrijati pećnicu s limom na kojem će se peći. Staviti lepinje s papirom na vrući lim...Peći 5-6 min na 250°C.
Brzo se napuhnu i to je dobar znak... Peći do željene boje...
Ostalo je povijest...i savršena gozba u najboljim čevapima kućne izrade ... s lepinjom za samo 60 min! 
A kakvi li će tek biti ovaj dio što sam za sutra ostavila! Jedva čekam saznati!

Kiša i prohladno jutro krivci su za naš današnji ručak! Krivnja se na kraju ipak pretvorila u zahvalu nebu... 
Jer 2 tikvice i nekoliko već prilično osušenih šampinjona i komadić pancete i sira je sve što se našlo u hladnjaku, ali i naš slasni ručak danas...

Sastojci: 
200 g šampinjona, 2 tikvice, 1 češanj češnjaka, 100 g mesnate pancete, maslinovo ulje, ribani sir ( parmezan ili bilo koji tvrdi ), tjestenina u obliku svrdla ( fusilli ) ili neka druga, sol i papar...

Narezati gljive, pancetu i tikvice.

Na 2-3 žlice ulja popržiti kratko sitno narezanu pancetu. Dodati gljive, popržiti na jačoj vatri nekoliko minuta i dodati tikvice... Pržiti još 2-3 min, dodati češnjak, posoliti, popapriti po ukusu .
Istovremeno kuhati tjesteninu u slanoj vodi. Ocijediti i sačuvati dio vode. Tjesteninu dodati povrću, podliti s malo vode i prokuhati na laganoj vatri miješajući... Dodati sir i još vode ako fali sočnosti. Na kraju nakapati s 1-2 žlice maslinova ulja! U slast !!!

Danas prestaje moja potraga za slasticom koja će zadovoljiti jedno posebno nepce u mom životu, a traži se već skoro trideset godina... Semifredo s kikirikijem i puno...puno karamel umaka ili jednom riječi rečeno - SAVRŠENSTVO!

Sastojci za grilaž: 
120 g kikirikija očišćenog od kore, 130 g šećera.
Za kremu: 
3 jaja, 100 g šećera u prahu, 1 vanil šećer, 500 ml vrhnja za šlag, 100 g kristal šećera
Za karamel umak: 
150 g kristal šećera, 150 ml vrhnja za šlag, 70 g maslaca

Karamelizirati šećer na srednje jakoj vatri...najbolje dodavati ga u posudu u 3 puta... Svaki put kad se prethodni otopi i zažuti...
Dodati kikiriki, miješati dok se ne ovije karamelom - dovoljno je 1-2 min. Pripremiti pek papir ili maslacom premazati ravnu i široku posudu i rasporediti grilaž... Kad se ohladi, izlomiti komade i samljeti krupnije...
Za kremu odvojiti bjelanjke od žutanjaka. Žutanjke pjenasto izmješati s prah šećerom i vanilijom i staviti na paru dok se ne počne zgušnjavati... 3-4 min je dovoljno! Maknuti s pare i povremeno promiješati dok se hladi.
Bjelanjke tući u čvrst snijeg... Istovremeno na vatri prokuhati 100 g šećera s 3 žlice vode dok ne postane prozirno... dok se šećer ne otopi... U snijeg ulijevati taj sirup i miksati istovremeno. Neka mlaz pada točno na mutilice... Miksati dok se ne ohladi ...ne traje to dugo.
Istući vrhnje u šlag, dodati kremu od žutanjaka i na kraju dodati ohlađene bjelanjke....
Četvrtasti kalup 30 x 11 prekriti prozirnom folijom, koja prelazi preko rubova što je moguće više... 
Slagati red kreme i red krupno mljevenog grilaža...ili po želji sve izmješati!
Izravnati površinu...stresti malo posudu i preklopiti krajeve folije preko kreme... Ostaviti na nekoliko sati u zamrzivač, najbolje preko noći...

Za karamel umak popržiti šećer... maknuti s vatre i uliti vrelo vrhnje... Jako pjeni, pa paziti i na laganoj vatri nastaviti kuhati 5-6 min... Umiješati maslac i maknuti s vatre.
Zgusne se kad se ohladi i baš je kako treba biti!

wanted for almost thirty years ... Semifreddo with peanuts and a lot of  caramel sauce or in a word spoken - PERFECTION !

Ingredients for "grilaž ":
120 g of peanut, 130 g of sugar . 
For the cream : 
3 eggs , 100 g powder sugar , 1 vanilla sugar , 500 ml heavy cream , 100g sugar 
For the caramel sauce : 
150g  sugar , 150 ml heavy cream , 70 g butter

Preparation:

Caramelize the sugar over medium heat ... best to add it to the pan in 3 times ... Each time the previous dissolved ... Add peanuts , stirring until caramel wraps - just 1-2 min . Prepare baking paper and place it on a flat, wide pan and spread grilaž ... When cool , break out the pieces and grind bigger ...
For the cream separate the egg whites from egg yolks . Mix egg yolk foam with powdered sugar and vanilla and put on a pair until it begins to thicken ... 3-4 minutes is enough ! Remove with steam and stir occasionally until cool . Beat the egg whites to stiff ... At the same time boil 100g of sugar with 3 tablespoons of water until it becomes clear ... until the sugar is dissolved ... In the egg whites  pour the syrup and mix at the same time . Let jet falls exactly on the whisk ... Mix until it cools down ... does not last that long .
Mix cream , add the cream of egg yolks and finally add the chilled whites .... Square mold 30 x 11 covered with plastic wrap , which passes over the edges as much as possible ...
